    Recently purchased this PAUDIN D1 chef's knife. Previously had quite some trouble cutting the meat nicely and evenly. I also had to really 'cut' with a lot of sawing movements. With this knife you really 'glide' through the meat! You place it on your cutting board (no glass of course!) and turn on the lights and effortlessly through your meat (or vegetables). Tendon work is also no problem. So here it can be said proverbially that it goes like a hot knife through butter, only this knife does not have to be heated up to go through meat or vegetables.
    Very satisfied and highly recommended.
