The PAUDIN C1 Professional Chef's Knife has a core of VG-10, a high-alloy stainless steel developed by Takefu Special Steels. This steel is very hard for stainless steel standards, and can be sharpened to a razor-sharp quality. It is also excellent for resharpening, which keeps this knife sharp for a long time.
