3-Slot Knife Sharpener

This knife sharpener has three locks, the first of which is made of tungsten carbide. This is used for coarse sharpening and quick polishing. The second lock is made of ceramic and is used for fine honing. Both of these locks are suitable for double bevel knives, or knives sharpened on both sides.

The third lock is also made of a ceramic sharpening stone. This lock is specially designed for sharpening scissors but certainly also suitable for other single-sided sharpened knives.

Sharpening double-sided knives 

1. Double-ground knives are always sharpened in the coarse slot (COURSE) or in the fine slot (FINE). Coarse are dark tungsten sharpening stones and the fine are white ceramic sharpening stones.
2. Set the desired sharpening angle by turning the wheel to the correct number of degrees.
3. Place the sharpener on a firm, flat surface and insert the blade into the desired slot. This will often be coarse at first, but with proper maintenance, fine can also be sufficient.
4. Hold the sharpener very firmly with one hand and hold the knife in the other hand.
5. Insert the blade all the way into the lock and hold it straight. Push the tip of the knife down slightly and pull the knife all the way through the lock from heel to tip in a smooth consistent pull with constant and moderate pressure on the knife.
6. Repeat this approximately 5-10 times per lock and always in a pulling motion. The number of times depends on the wear of the knife. Never pull the knife back and forth, this will damage both the knife and the sharpener very quickly.

Sharpening of scissors

1. Place the KS1 Adjustable 3-Step Knife Sharpener on a sturdy, flat surface and insert the scissors into the SCISSORS slot with one blade of the scissors on each side of the ceramic white sharpening stone.
2. Hold the sharpener very firmly with one hand and hold the scissors in the other hand. Insert the scissors all the way in and close the scissors (cutting motion) while pulling them back until the scissors are completely out of the lock. Repeat this 5 - 10 times again depending on the wear of the scissors.

Real all-in-one all-rounder

This chef's knife sharpener is suitable for restoring all straight knives, serrated knives, scissors, chef's knives, paring knives, boning knives, office knives, Nakiri knives, etc. Only use the 2nd slot with the ceramic sharpening stones for sharpening lightly serrated knives such as steak knives (not bread knives).
