A Nakiri knife is a small vegetable hatchet that is popular in Japanese home kitchens. Because it is normally sharpened (double-sided), everyone can cut well with it. The most important characteristic is the thickness of the blade, which is very thin. This allows you to cut very precisely and finely. This makes them perfect for cutting vegetables and fruit very thinly. For example, you can chop an onion much finer than with a normal knife, but a Nakiri knife also does not shy away from fine cutting work.

A Nakiri knife is different from a standard chef's knife. The blade is extra wide over the entire length and is therefore ideal for picking up finely chopped vegetables on the blade or you can even slide the finely chopped vegetables from the cutting board into the pan.
This Asian Nakiri knife is made of forged Damascus steel with a "feather" pattern. Between the 32 layers of Damascus steel per side is a core of VG-10, with which you actually cut. This steel is, certainly for stainless steel standards, very hard and can be sharpened razor-sharp.
VG-10 is a high alloy stainless steel developed by Takefu Special Steels, containing approximately 1% carbon, 15% chromium, 1% molybdenum and 1.5% cobalt. This creates an extremely strong and hard matrix. By adding 0.25% vanadium, the structure becomes finer, which improves the wear resistance, allowing this knife to stay sharp for a long time.
The scaring or in a nice word quenching of the metal is done by means of liquid nitrogen, which results in an ideal crystal structure of the steel. In addition, this makes the steel extra hard. The right combination of chemicals in the steel and the final quenching ensure an extremely strong knife that excels in edge retention and therefore remains sharp.
The stainless high-carbon 67-layer Damascus steel used is characterized by a very high hardness of more than 62 Rockwell Scale of Hardness, part C (HRC). The innovative high-carbon steel core contains vanadium, which improves wear resistance, hardness and ease of sharpening. The 17.5 centimeter long vegetable axe is hand-sharpened by a true craftsman at an angle of 12-14º per side, where 17º is normal. This exceptional combination ensures high hardness, exceptional corrosion resistance and a long-lasting sharp end result that you will enjoy for years.
The kitchen knives from the Paudin Plume Luxe series are designed with a feather as a source of inspiration. Thin and sharp, light and comfortable, balanced and beautiful!
The Plume Luxe series is Paudin's flagship collection. Both the blade and the handle are made of the best materials and their striking appearance makes them an absolute work of art. The forging process of Damascus steel gives the blade a beautifully shaped appearance. That is why many people are initially attracted to Damascus steel.
The knife is scientifically designed with a perfect proportion between the blade and handle balanced precisely on the bolster. This way you have intuitively a better and safer control over the knife. Ideal for all your cutting work!
The handle is carefully crafted from G-10, an incredibly strong military-grade and non-porous fiberglass-like material. It is highly insensitive to both heat and moisture and has a lifelong durability. The indestructible G-10 never swells, shrinks, cracks or discolors. Furthermore, the handle is ergonomically shaped and fits perfectly in your hand to provide the best possible grip, even when your hand or the knife is wet. You can be sure that your wrist is protected, even during long cooking sessions. In short, the ideal kitchen knife for the real star chef!
A good Nakiri knife is not something you buy for a short while, but should last for years and provide relief in all situations. Paudin stands for quality and durability, only the best types of steel are used and the finish is always of the highest level. A Paudin knife is razor-sharp, elegant and has a safe, ergonomic and comfortable grip. All this ensures that this Nakiri knife can rank among the strongest and best knives on the market within its segment! In short, PAUDIN kitchen knives are the knives you are looking for!
Despite the fact that a PAUDIN knife is suitable for use in a dishwasher, we strongly advise against using it. A long-term warm, dirty and wet environment is simply not the best for a knife. For a long lifespan, we therefore recommend washing the Nakiri knife by hand and drying it immediately. Despite the very high carbon content, the knife should always be stored dry to prevent small rust spots.
Preferably store your Nakiri knife in a knife block, on a magnetic strip or even back in the gift box. Never leave the knife lying around in the cutlery drawer, as there is a chance that the knife will become blunt due to the constant collision with other knives. For the same reason, we also recommend the use of wooden and/or plastic cutting boards. Cutting boards made of glass, stone and other materials do not do any good to the sharpness of the knife.
No matter how good a knife is, every knife will become blunt over time and through use. Therefore, sharpening it on a sharpening steel before use would be ideal. For a longer lifespan, it is advisable to have the knife sharpened professionally once every 1 to 2 years. In this way, this knife can contribute to the cutting pleasure in your kitchen for years!
