Blade made of genuine Japanese Damascus steel

This Asian Office knife is made of forged Damascus steel with a "feather" pattern. Between the 32 layers of Damascus steel per side is a core of VG-10, with which you actually cut. This steel is, certainly for stainless steel standards, very hard and can be sharpened razor-sharp.

VG-10 is a high alloy stainless steel developed by Takefu Special Steels, containing approximately 1% carbon, 15% chromium, 1% molybdenum and 1.5% cobalt. This creates an extremely strong and hard matrix. By adding 0.25% vanadium, the structure becomes finer, which improves the wear resistance, allowing this knife to stay sharp for a long time.

Hardening the Blade

The scaring or in a nice word quenching of the metal is done by means of liquid nitrogen, which results in an ideal crystal structure of the steel. In addition, this makes the steel extra hard. The right combination of chemicals in the steel and the final quenching ensure an extremely strong knife that excels in edge retention and therefore remains sharp.

The stainless high-carbon 67-layer Damascus steel used is characterized by a very high hardness of more than 62 Rockwell Scale of Hardness, part C (HRC). The 12.5 centimeter long knife is hand-sharpened by a true craftsman at an angle of 12-14º per side, where 17º is normal. Maintenance

Despite the fact that a PAUDIN knife is suitable for use in a dishwasher, we strongly advise against using it. A long-term warm, dirty and wet environment is simply not the best for a knife. For a long lifespan, we therefore recommend washing the Office knife by hand and drying it immediately. Despite the very high carbon content, the knife should always be stored dry to prevent small rust spots.

Preferably store your Officemes in a knife block, on a magnetic strip or even back in the gift box. Never leave the knife lying around in the cutlery drawer, as there is a chance that the knife will become blunt due to the constant collision with other knives. For the same reason, we also recommend the use of wooden and/or plastic cutting boards. Cutting boards made of glass, stone and other materials do not do any good to the sharpness of the knife.

No matter how good a knife is, every knife will become blunt over time and through use. Therefore, sharpening it on a sharpening steel before use would be ideal. For a longer lifespan, it is advisable to have the knife sharpened professionally once every 1 to 2 years. In this way, this knife can contribute to the cutting pleasure in your kitchen for years!
