Knife types
Once you start looking for a quality knife, an inexhaustible sea of knife types unfolds: a chef's knife, a meat knife, a Japanese meat knife, a bread knife, a santoku knife, etc. Is it better to buy a chef's knife or a nakiri knife? And, is a steak knife really better than a meat knife? You're probably dizzy?
What do you use which knife for? On this page we list all types of Paudin clearly listed for you.
Chef's knife
There is only 1 knife we can start with: the chef's knife. This is also the most important knife for professional (star) chefs. Its multifunctionality is the explanation for this: you can use a chef's knife for literally anything. Whether you are in the kitchen or outside behind the BBQ, whether you have to cut vegetables, fruit, fish or meat, the chef's knife always comes in handy.

Santo knife
A Santoku knife is a relatively light knife and is suitable for multiple cutting tasks in the kitchen, such as cutting meat, fish, poultry and vegetables. This knife is really comfortable in the hand of everyone and therefore you can cut a lot with it in a short time (but be warned: it does take some practice).
Compared to a chef's knife, the blade is much wider over the entire length of the blade and tapers to a sharp point at the end. This 'hill' in the blade makes cutting almost automatic.
Paudin offers the following Santoku knives:
Nakiri knife
In Japan, a Nakiri knife is an indispensable part of the kitchen. This axe is used a lot, especially when chopping vegetables. Because this knife is cut on 2 sides and has a very thin but wide blade, everyone can work well with it. The result is very finely cut vegetables and fruit (much finer than with a regular knife), which is ideal when chopping an onion, for example.
A Nakiri knife is different from a standard chef's knife. The blade is extra wide over the entire length and is therefore ideal for picking up finely chopped vegetables on the blade or you can even slide the finely chopped vegetables from the cutting board into the pan.
Paudin offers the following Nakiri knives:

Chinese chef's knife / Chinese axe
A Chinese chef's knife/Chinese axe is very popular in China (hence the product name). The Chinese use this relatively heavy knife mainly for cutting hard vegetables such as carrots, pumpkin and winter carrots. At the same time, this knife is also good for cutting chicken wings, because you simply cut through the joints with this knife.
All in all a versatile knife, one that you will use more often than you initially think. And finally, because of its robust appearance this knife always does well on BBQ's…
Paudin offers the following Chinese chef's knives:
Vegetable knife / office knife / fruit knife
Although it is not office work, chefs still use a so-called office knife. This is a small knife for finer cutting work in the kitchen. That is why this knife is also called a vegetable knife or fruit knife. The small blade is usually 8 to 12.5 cm in size, which makes this knife suitable for finer cutting work. There are also smaller office knife variants, chefs even use these as a paring knife.

Steak knife
Steak knives are cutlery knives and specially designed to cut meat with. A good steak knife does not tear the meat, because tearing causes the meat to lose its juices and (much of its) flavour. A steak knife is therefore guaranteed to be a tasteful investment!
Paudin offers the following steak knives:
Meat knife / Carving knife
A meat knife has a long and narrow blade. Thanks to this long length, you can make a long cutting movement, which even produces nice, neat slices with large types of meat or fish. As the name suggests: a meat knife is suitable for all types of meat. But that's not all: a meat knife can also serve as a sushi or sashimi knife.

Less well known is that you can also cut softer dough products such as bagels, cake and pastries with a bread knife. And, our Paudin bread knife is even suitable for cheese, fruit and vegetables!

Boning knife / Filleting knife
A filleting knife is a kitchen knife with a flexible blade, which makes it easy to move, making it ideal for deboning various types of meat.
A boning knife looks a lot like a filleting knife, but is not as flexible and has a different shape. However, a boning knife is very flexible compared to other knives and that is why you can also fillet with it very well. You can also skin game and poultry with it, as well as boning, filleting, defleshing and trimming other types of meat.
In short, an extremely suitable gift for every (home) chef and barbecue enthusiast!
Paudin offers the following boning knives:
Ham knife / Salmon knife / Filleting knife
A ham knife is ideal for cutting beautiful, thin slices of ham, turkey and the like. However, as is the case with many types of knives, this knife is also multifunctional. For example, you can also use a ham knife to remove the skin of a cod or to carve a salmon. Thanks to the thin, narrow and flexible blade, a filleting knife is not necessarily necessary, if you already have a ham knife at home.
Paudin offers the following ham knives:
